Chard with Tomatoes, Currants and Pine Nuts

Swiss Chard, one of the most popular vegetables in a Mediterranean kitchen, is also nutritious - second to spinach, and is available throughout the year at most supermarkets. The leafy green is sauteed with salty prosciutto, sweet currants and diced tomatoes for a savory and quick side dish to compliment your favorite chicken, pork or fish entree.

ingredients

2 tablespoons extra virgin olive oil
1/4 cup diced prosciutto, about 3 ounces chopped
2 garlic cloves, thinly sliced
2 shallots, chopped
2 bunches red chard, or rainbow chard, cleaned and chopped
1 (28 ounce) can Tuttorosso® Diced Tomatoes in rich tomato juice, drained
3 tablespoons dried currants, or raisins
1 teaspoon red pepper flakes
Salt and black pepper to taste
1/4 cup toasted pine nuts

instructions

  • In a large skillet heat oil; add prosciutto and cook until crisp. Add garlic, shallots and chard; stir to combine. Cook until chard is softened, 3 to 4 minutes.
  • Add diced tomatoes, currants, red pepper flakes, salt and black pepper.
  • Cook for 4 to 5 minutes until chard is tender.
  • Before serving sprinkle with pine nuts.
