Sausage Tortellini Soup

Cheesy tortellini and hot Italian sausage harmoniously intermingle in this soup. They work together to make this recipe hearty, flavorful and super satisfying, especially on a chilly evening.

ingredients

1 pound Italian sausage
1 onion, chopped
1 clove garlic, crushed
2 (14.5 ounce) cans chicken broth
2 (14.5 ounce) cans Tuttorosso® No Salt Added Diced Tomatoes, or 1 (28 ounce) can Tuttorosso® No Salt Added Diced Tomatoes
1 (15 ounce) can cannellini beans, or great northern beans
1/2 teaspoon dried oregano, crushed
1/2 teaspoon dried marjoram, crushed
1/4 teaspoon crushed red pepper
1 package refrigerated cheese-filled tortellini, cooked
3 tablespoons chopped fresh parsley

instructions

  • In a large saucepan brown sausage. Stir in onion and garlic; cook until onion is soft, about 3 minutes. Drain off excess fat.
  • Stir in chicken broth, diced tomatoes, beans, oregano, marjoram, red pepper and pasta; bring to a boil. Lower heat and simmer for 15 to 20 minutes.
  • Sprinkle with parsley on top of each serving
