  • Brush bread slices with olive oil and broil on each side until toasted. In a small bowl combine the remaining ingredients, except cheese.
  • Spoon tomato mixture onto the toasted bread and sprinkle with cheese. Place under the broiler for 1 to 2 minutes to melt the cheese. Serve warm.
Bruschetta is practically garlic bread; warm and crisp on its own, but made even better with a flavorful topping. Try this fresh basil, garlic and diced tomato mixture with fresh Parmesan for a light, fresh version.

2 (14.5 ounce) cans Tuttorosso® Diced Tomatoes Basil, Garlic & Oregano, or 1 (28 ounce) can Diced Tomatoes, drained
4 tablespoons fresh chopped basil
Salt and black pepper to taste
