No one wants to eat a 'small' sandwich, but call it a slider and watch them disappear! These sandwiches are a twist on a classic Italian favorite - Chicken Parmesan. Handheld, easy to make and every bit as tasty, a savory chicken patty topped with melted cheese and our
Pasta Sauce Marinara
. Perfect for parties and gatherings.
Ingredients
Copy Ingredients
1 small red onion, diced
2 garlic cloves, minced
3 tablespoons olive oil
1 pound ground chicken, dark meat or mixture of white and dark
1/4 cup Parmesan cheese, grated
1 tablespoon
Tuttorosso® Tomato Paste
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 teaspoon red pepper flakes
1 (24 ounce) jar
Tuttorosso® Pasta Sauce - Marinara
or 1 (24 ounce) jar
Tuttorosso® Traditional Pasta Sauce
Salt and black pepper to taste
4 ounces shredded mozzarella cheese
8 slider buns
16 fresh basil leaves
Instructions
Heat medium sized skillet with 1 tablespoon of olive on over medium heat. Add the onion and garlic, cook for 5 minutes. Remove from heat and set aside to cool.
In a large mixing bowl combine the cooled onion mixture, chicken, Parmesan, basil, parsley, pepper flakes and tomato paste; season with salt and pepper. Mix together and divide into 8 servings. Shape mixture into 8 patties. Place on a plate, cover and refrigerate for 15 minutes.
Heat a large pan over medium heat with 2 tablespoons of olive oil. Cook the patties for 5 minutes on each side. Turn the heat down to low and top each patty with pasta sauce and cheese. Cover to melt the cheese.
Toast the slider rolls either in your oven or in a skillet with butter, place patty with melted cheese on top of bottom slider bun, top patty with basil leaves and top bun. Serve warm.
