These adorable pizza muffins bake up quickly in a muffin tin and have a saucy and ooey-gooey cheese center. Using the highest quality Tuttorosso San Marzano Style Hand Crushed Tomatoes give these a fresh tomato flavor. Ingredients

1 envelope active dry yeast, .25 oz or 2 1/2 teaspoons
2 teaspoons sugar
1 1/4 cups warm water, approx. 110°F
3 1/2 cup (4 ounces) flour, plus more for kneading
1 teaspoon kosher salt
5 tablespoons extra virgin olive oil, divided
1 (28 ounce) can
Tuttorosso® San Marzano Style Hand Crushed Tomatoes in Puree with Basil & Sea Salt
1 teaspoon dried oregano
2 cups mozzarella cheese, shredded, low-moisture
Instructions
FOR THE PIZZA DOUGH
Add yeast and sugar to the warm water and stir to combine. Allow to sit 15 minutes to bloom.
Pour the flour and salt into the bowl of a standing mixer. With the motor running, add the bloomed yeast; using the dough attachment, mix to combine. Slowly pour the water into the bowl with the motor running until a slightly wet dough forms.
Empty the dough onto a floured surface and form into a ball. If the dough is tacky, add just enough flour to pull at the ends and bring them to the center until the surface is smooth. The dough should be very soft and supple but dry to the touch.
Place in a large bowl and drizzle olive oil on top. Spread the oil over the surface and cover the top of the bowl tightly with clink wrap so it is completely sealed. Place the bowl in a warm place for one hour or until it has doubled in size.
Once the pizza dough is ready, preheat the oven to 350°F.
FOR THE CHEESY CENTER & TOPPING
Generously oil a muffin tin with 2 tablespoons extra-virgin olive oil.
In a small bowl, combine the crushed tomatoes, oregano and remaining tablespoon of olive oil.
Cut the pizza dough into 12 equal pieces - approximately 2 ounces each.
Roll them out and place a few tablespoons of the sauce on to the dough and spread down the middle. Add a handful of mozzarella and roll the dough up. Place the dough swirl side up.
Add an additional teaspoon of tomato sauce in the middle of each top and then another few pinches of mozzarella.
Place the muffin tin into the oven for 30 minutes. Serve immediately or at room temperature.
