Pizza Soup

No more arguments about soup or pizza for dinner. This meat lover’s soup is a mash-up of the two family favorites! Our Diced Tomatoes add flavors of basil, garlic and oregano to this hearty soup you can make in the Instant Pot or on the stove top.

Ingredients

1 pound Italian sausage
1 1/4 sliced fresh mushrooms
1 onion, finely chopped
2 garlic cloves, minced
1 cup water, or can substitute with vegetable or chicken broth
1 (28 ounce) can Tuttorosso® Italian Inspirations Crushed Tomatoes Chunky Style
1 (14.5 ounce) can Tuttorosso® Diced Tomatoes Basil, Garlic & Oregano
1 cup pepperoni, diced or sliced pepperoni chopped
1/2 teaspoon Italian seasoning
1/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese, for garnish

Instructions

Instant Pot Directions

  • Set Instant Pot to sauté and cook the sausage along with the onion, garlic, and mushrooms for 3-5 minutes or until sausage is browned and cooked through. Press Cancel on Instant Pot and add the water (or broth), crushed tomatoes, diced tomatoes, pepperoni, and Italian seasoning. Stir to combine and set pot to Manual High Pressure and set timer for 10 minutes. When time has elapsed, allow pot to natural pressure release for 5 minutes, then manually release remaining pressure. Carefully remove lid and stir in Parmesan cheese.
  • Ladle into soup bowls and garnish with mozzarella cheese.

Stove Top Directions

  • In a large soup pan or heavy bottomed sauce pan, sauté sausage, mushrooms, onion, and garlic until sausage is browned and cooked through. Add water (or broth), crushed tomatoes, diced tomatoes, pepperoni, and Italian seasoning. Bring to a boil. Reduce heat, cover and simmer for 20 minutes, stirring occasionally. Remove lid, stir in Parmesan cheese. Ladle into soup bowls and garnish with mozzarella cheese.

Leftovers can be stored in a sealed container for 3-4 days or frozen for up to 6 months. We like to enjoy our pizza soup with a salad or grilled cheese sandwich. This is a hearty, crowd-pleasing soup perfect for game days or weeknights.
