  • Using a 10-inch skillet, lightly brown chicken pieces in oil over medium heat.
  • Add crushed tomatoes with basil, mushrooms, garlic, pepper and oregano. Stir to blend.
  • Return chicken pieces to skillet and simmer, covered for 30 to 40 minutes. Serve over cooked vermicelli or spaghetti.
Our savory version uses legs and thighs and a bit of tomato for roasted goodness.
