- In a large skillet, heat olive oil over medium heat. Add the anchovies and cook until the anchovies dissolve into the oil, you will need to keep moving them in the oil to get them to break apart. Add the garlic and cook until lightly brown, about 1 minute; be careful to not burn the garlic. To the pan, add the chili flakes and cook about 20-30 seconds, then add the chopped tomatoes, olives, capers, and parsley.
- Turn heat down to low and simmer for 15 minutes. The sauce will thicken as it simmers.
- Taste and season as needed with salt and pepper. Serve with your favorite pasta - ours is Bucatini!
