2 tablespoons olive oil
8 ounces Italian sausage, hot variety
1/2 onion, diced Spanish variety
5 garlic cloves, minced
3 tablespoons
Tuttorosso® Tomato Paste Sweet Basil
1 cup orzo pasta
2 1/2 cups chicken broth, low-sodium if preferred
1 cup heavy cream
2 tablespoons basil, freshly chopped
1/2 teaspoon Italian seasoning
1/4 teaspoon kosher salt, or more to taste
freshly ground black pepper, to taste
red pepper flakes, to taste
1 tablespoon chili paste, plus more for serving (optional)
freshly grated Parmesan cheese, for serving
Instructions
Heat the olive oil in a large pan over medium-high heat. Add the sausage and let it cook undisturbed for about 2 minutes to develop a nice crust. Continue cooking, breaking the sausage into pieces, until fully cooked. Remove from the pan and set aside.
In the same pan, add the diced onions and cook until translucent, about 3 minutes.
Stir in the minced garlic and Tuttorosso Tomato Paste with Sweet Basil. Cook for 1-2 minutes until the tomato paste caramelizes slightly. Add the orzo to the pan and stir to coat it in the tomato mixture.
Pour in chicken broth, bring to a simmer, and cook for about 10 minutes, stirring frequently to prevent sticking. The orzo should be al dente. Stir in the heavy cream and let cook for another 2-3 minutes until thickened.
Return the cooked sausage to the pan, stir in the fresh basil, and adjust taste with Italian seasoning, salt, pepper and red pepper flakes as needed. If using chili paste, mix it in at this step for extra heat.
Garnish with freshly grated Parmesan, additional chili paste, and black pepper. Serve immediately and enjoy!
