1 pound beef stew meat, or piece brisket
2 medium onions, chopped
1 1/4 teaspoons dried oregano

Tuttorosso® Tomato Paste
4 garlic cloves, minced
1 (28 ounce) can
Tuttorosso® Peeled Plum Tomatoes
1 (28 ounce) can
Tuttorosso® Crushed Tomatoes with basil
2/3 cup beef broth
Salt and black pepper to taste
Cooked meatballs, frozen or homemade
1/4 cup chopped fresh flat-leaf parsley
Pasta of choice, cooked and drained
1 cup shredded Parmigiano-Reggiano cheese
Instructions
Preheat oven to 325
o
F. Heat oil in Dutch oven and brown ribs, 5 to 7 minutes, remove to plate. Add sausage and brown 5 to 7 minutes, remove to plate. Add stew meat and brown for 5 to 7 minutes, remove to plate.
Add onion and oregano to Dutch oven and cook for 5 minutes; stir and scrape drippings from bottom of pan. Next add tomato paste and stir until dark without burning. Add garlic and cook for 30 seconds, just till fragrant-don’t burn. Crush peeled plum tomatoes with hands before adding to the pot, along with the juice. Lastly add crushed tomatoes, beef broth, salt and black pepper.
Add meats, with juices, back to sauce; bring to a simmer. Place cover on Dutch oven and bake for 2½ hours. Meantime make your favorite meatball recipe.
Remove sauce from oven and remove brisket (or beef stew meat if using) and shred with a fork. Skim off excess fat and return shredded meat to sauce. Nestle meatballs into sauce and add the parsley; return to oven for 15 minutes. Remove ribs and sausage from sauce and put onto a plate.
Serving Options: Place all the meat on a platter. Dress the pasta with 1 cup of sauce and place in a serving bowl. Place extra sauce in another serving bowl.; Put cheese in another bowl as an option. Build your own Sunday Gravy with the ingredients you enjoy!
