1/3 cup crumbled feta cheese
1 cup cottage cheese
1 teaspoon olive oil
1 tablespoon lemon juice
5 or 6 cloves minced garlic, divided
Kosher salt and freshly ground black pepper to taste
1 (14.5 ounce) can
Tuttorosso® Petite Diced Tomatoes
, drained
3 tablespoons basil leaves, freshly chopped
1 tablespoon balsamic vinegar
balsamic glaze, optional for serving
Instructions
Make the Base: In a food processor, combine feta, cottage cheese, olive oil, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy.
Make the Tomato Mixture: In a small bowl, mix together the Tuttorosso® Petite Diced Tomatoes, garlic, basil, balsamic vinegar, salt, and pepper.
Assemble: Spoon the tomato mixture over the whipped feta and cottage cheese base. Drizzle with balsamic glaze, if using.
Serve: Enjoy with crostini, crackers, or sliced veggies—or use as a topping for grilled chicken or grain bowls.
