This Spaghetti all’Assassina recipe offers a unique twist on traditional pasta-making methods. 1 (28 ounce) can Tuttorosso® Italian Inspirations Crushed Tomatoes Chunky Style
1 (6 ounce) can Tuttorosso® Tomato Paste Roasted Garlic
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 1/3 cups water
6 garlic cloves, thinly sliced
1/3 cup olive oil
1 pound spaghetti
2 burrata, balls
basil, fresh, for garnish

Instructions

  • In a medium-low heat pan, mix the Tuttorosso Italian Inspirations Crushed Tomatoes and Tuttorosso Tomato Paste with Roasted Garlic. Season with salt and pepper, setting aside about 1 cup of the sauce for later use. Add water to the remaining sauce and keep it simmering to stay warm.
  • In another pan, sauté the thinly sliced garlic and chopped chilies in olive oil for a couple of minutes. Add the reserved sauce (without water) to the pan, then drop in the spaghetti. Cook until the bottom of the pasta caramelizes. 
  • Gradually add the watered-down sauce to the pasta, flipping and stirring as it cooks. Cover the pan for the last few minutes of cooking. The spaghetti should be nicely caramelized at this point. 
  • Serve topped with burrata, a drizzle of olive oil, and fresh basil.
