Roasted Tomatillo Salsa with Tomatoes

• Preheat oven to 350º F
• Line a baking sheet with aluminum foil and parchment paper (for easy clean up). Place the tomatillos, onions, 2 cloves of garlic, and serrano chili; toss with olive oil. Place in the oven and roast for 12 minutes.
• Place the vegetables and the remaining garlic clove into a blender or food processor and blend for 1 minute.
• Pour into a medium bowl and add the petite diced tomatoes, lime juice, cilantro, and season with salt and pepper. Taste and adjust seasoning as needed.

Cook's Note:
Tomatillos can be found in the produce tomatoes. They look like small green tomatoes with a husk. They are a bit more acidic and less sweet than unripe tomatoes. When roasted, the acidic flavor mellows and becomes savory.
