Tomato Onion Gnocchi

Filling and unforgettable, gnocchi is an Italian favorite for a reason. This special iteration of the classic dish brings out the flavors of pancetta, peeled plum tomatoes and fresh garlic.

Ingredients

Copy Ingredients
1 tablespoon extra virgin olive oil
5 ounces pancetta, finely chopped
1 large red onion, finely chopped
1 garlic clove, minced
1 (28 ounce) can Tuttorosso® Peeled Plum Tomatoes, chopped
1/2 cup water
1 teaspoon sugar
Salt and black pepper to taste
1 box potato gnocchi, prepared according to package directions or 1 bog frozen potato gnocchi prepared accounding to package directions

Instructions

  • Heat the oil in a large saucepan over medium high heat until hot. Add pancetta and onion, stirring until onion is golden brown, about 6 minutes.
  • Add garlic and sauté until golden, about 1 minute.
  • Add tomatoes with juice, water, sugar, salt and black pepper. Simmer, uncovered, stirring occasionally, until thickened, about 30 minutes.
  • Place prepared gnocchi in serving bowl and spoon sauce on top.
  • Option: sprinkle with Parmesan cheese and chopped fresh parsley before serving.
